homemade fruit bread/loaf

    1lb Strong plain flour
    1tsp salt
    1oz butter
    1oz caster sugar
    4 oz currants (like i said we use dried mixed fruit) 4tsp dried yeast made up with water
    1/4 pint lukewarm water
    1/4 pint lukewarm milk
    honey or golden syrup - though have used sugar water when we havent had it in

    sift flour, salt in bowl and rub in butter, ad the sugar and currants (dried fruit) and mix together

    dissolve 1tsp sugar in warm water and milk, sprinkle yeast on top and leave in a warm place for 10 mins or so until frothy

    add to the dry ingredients (in one go) and if its a little sloppy just add a little extra flour - work into a ball untill the dough leaves the side of the bowl clean

    turn out and knead for 10 mins on a lightly floured surface

    cut into 2 equal size pieces and shape to fit into a 1lb loaf tin, brush the tins with a little butter and put in the dough

    cover with a tea towel and leave till the dough rises to the tops of the tins

    bake at 220c , gas mark 7 for 30-40 mins - i tap them like you do bread to see if they are done

    leave to cool then brush with the melted honey or golden syrup then leave to cool ,

    i have added cinnamon in the mix and mixed spice etc when making the bread to make it taste different all worked and never used more than a 1/2 tea spoon of these

    keep in something air tight and dont let the kids cut their own slices because its yummy so people tend to cut doorstops !

    Gen, made the bread as per your recipe today and it was fantastic!!! Not much left now though as the family started eating it before it had cooled down properly - will definately be using again :beer:
  • Like you I love the W@rburtons fruity loaf, it reminded of a fruit bread we used to buy from the local village bakers years ago called a Selkirk Bannock. There are recipes available on the internet for this including the bbc food site.

    Your post reminded of this so I will be trying to make it soon. :)

    Like you I love the W@rburtons fruity loaf, it reminded of a fruit bread we used to buy from the local village bakers years ago called a Selkirk Bannock. There are recipes available on the internet for this including the bbc food site.

    Your post reminded of this so I will be trying to make it soon. :)
