  • Cheese potato and onion creamy 'hotpot'

    Layer of sliced potato, layer of thinly sliced onions, layer of cheese, repeat until your casserole/pyrex dish is full, top off with layer of cheese, pour milk/single cream over the layers letting it sink in until all layers are coated. Cook in preheated oven @180c for 45 mins or until all layers are soft.

    Some great ideas! I like the cheese onion and potato hotpot too. I'd break the eggs into containers and freeze as suggested above to save those.

    I have used the potato up in a few dishes (inc the hotpot - yummy!) & the rest frozen as mash. I've chopped & frozen several batches of onions & also made a cheese/bacon/onion quiche. I don't have any really small tupperware containers - I'll try freezing some beaten egg in the smallest container I have, but I'm guessing it may not be successful!
    I intend to make another quiche tomorrow, but I still have eggs left! They will last a little while yet, but any more ideas would be gratefully received :)

    I store my small leftover yogurt pots - they are invaluable for freezing individual portions of any liquids.

  • We'd make a yummy recepie I once found on the back of a packet of turkey ham (and have adapted since).

    Boil potatoes (just random smallish cubes is fine)
    hard boil a handful of eggs
    mix up some cheese sauce (hmm tho with wheat intolerance you couldn't do this with flour - sorry for sounding naive but is there asubstitute??) - I guess it'd work with gravy.....
    few handfuls of sweetcorn (optional)
    ham (or you could use bacon for super yumminess)
    LOTS of cheese (this is prob the least MSE bit of it.

    How the packet says to do it:
    throw all the above in a big bowl and mix it together. top with cheese - then bake in the oven until cheese cooks.

    How I do it:
    layer the potato to cover the bottom (as deep as it needs to go before it runs out)
    layer the eggs
    layer the sweetcorn
    layer the ham
    cover with cheese sauce
    sprinkle with cheese
    bake.
    sprnkle with cheese


    I guess you could also add the onions to this with no problem (we don't eat onions so never tried it)

    I know it's wierd, but an old farmhouse way of preserving eggs was to coat them in lard or other hard fat... not sure if it works, but worth a go?
  • Quiche and freeze
    Pancakes and freeze
    Yorkshire puddings and freeze
    Omelettes/fritatta
    Cakes
    You could roast the potatoes until just coloured and freeze them
    Make HM wedges and freeze them.
    If the potatoes have lots of shoots bury them in the garden and in 12 weeks you will have a nice crop of potatoes
