I have about 18 eggs, 10 onions & a fair few potatoes that need using up - so what ideas does anyone have that I could make & hopefully freeze?
I have bits & bobs of other stuff in like a bit of cheese, a bit of bacon etc - but need to mostly use up the eggs, onions & potato!
Just to note that I am allergic to tomatoes & wheat intolerant which may cut down some suggestions ...

This is screaming spanish omelettes to me
you can also break the eggs into little tupperwares and briefly beat with a fork, then freeze, good for egg fried rice or scrambled eggs at a later date?:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Can I just check why the onions and potatoes need using up - it's not because of dates on the bags is it? As they will probably last alot longer than the dates given.If you haven't got it - please don't flaunt it. TIA.0

No, they're very much towards the end of their life - a couple of onions have sprouted and the potatoes are in danger of going soft if they aren't used soon0 -
could you chop n dice the onions n pop them in the freezer for future use?0

I would either do omelettes (would use everything inc cheese & bacon!) or mash potato with onion if not chop & freeze the onion for future curries/chillies etc

Spanish omelette as in tortilla - just eggs, potatoes, onions. Slice veg thinly and saute for a while until potatoes are nearly cooked through. Beat eggs, add to veg and cook like a thick omelette - should be about 3 cm thick. If you're daring when the top is just set slide it onto a plate, turn the pan over the plate hold the two tight and turn the pan right side up. Or brown under the grill. Good hot, very good at room temperature.
