Poland; Lithuania; Latvia & Estonia - ideas for family holiday

Hi,

Next year, I am considering taking my family to one of the above places... never been before. Not a clue where to start, so would appreciate recommendations, so I can start doing some research.

Ideally, this is what I am looking for:
warm/dry weather
access to a clean, sandy beach
a location, which has retained it's character and culture
great local food

Hobsons_Choice

Tallin is a lovely place. Full of culture and old buildings, a museum on every corner and access to the beach.
Food is excellent and the weather when we went (early July) was hot.
