Does anyone know how to disconnect copper pipe from this type of fitting? I thought it was twist and lock/unlock but it doesn't seem to budge.

You have to pull the collar forward , they sell a tool to do it with.

See image below.
Remove retaining cap by unscrewing and slide away down pipe. Pipe can the be withdrawn from the fitting and will bring the grab wedge with it. You might also get the support ring and the O ring as well. Support ring and O ring will just slide off and can be replaced in the fitting.
The grab wedge is what holds the pipe in the fitting and the silver parts you can see "grip" the pipe. Be careful these are very sharp! Although AB is strictly speaking correct in that there is a special tool to remove it in fact you can remove it by applying gentle finger pressure around its circumference. Don't force it off with a screwdriver - you'll mark the pipe and damage the wedge and have a poor joint later on if you try to reuse either pipe or wedge.
If you are downloading Hep2O documents be aware that your fitting is of the previous type. The "improved new generation" product is different - its a lot slimmer, the guts are different and its white rather than grey. So if you get the new generation installation docs you will not see the type you have in it.

Keystone's reply is complete, but I would add just two points: The retaining cap should be hand tight but can be difficult to turn if access is limited by being close to a wall for example. The green grab wedge is Hep2O version 3 - version 2 had a white grab wedge (and no support ring).0
