Freezing cooked salmon?

In preparation for a family lunch, I defrosted a whole side of salmon that had been lurking in the freezer since Christmas!
I lovingly poached it in herbs, lemon and white wine - and the lunch had to be postponed!
My question is - can I re-freeze it 'as is' or if I make it into quiches etc. can I re-freeze? (Same question, I suppose!:o)

Yes.
You could NOT defrost and then refreeze straight away.
But since you have changed the state of the product by cooking it - you can now safely freeze it.

HI,
I would think you can freeze it cooked. When you buy ready made meals in a shop you can freeze them and the salmon in them is already cooked.. so cannot see why not.
Wouldn't trust it to look good when defrosted as a main piece of meal, but as a topping on quiches and stuff I would.
Quick question: Anyone here freezes smoked salmon? For lunches.. salads and sarnies and such.0 -

I have the pastry resting in the fridge for a couple of quiches and we will have the rest with pasta, peas, lemon, cream and cheese for dinner tonight!
