Inspiration & help for short UK break needed!

My partner & I have to be out of our apartment in Southampton Sat & Sun nights this w/e due to work in the bathroom and are looking for somewhere to stay. Have been looking around South Coast area up to Cardiff and some good deals but cant decide and thought I'd ask my fellow MSEers.
So we need:
1 Double room
2 nights
minimum B&B in house restaurant nice but not essential
would like somewhere 4-5* if possible
lively place but quiet hotel location
pool & gym nice but not a deal breaker

    Gawd, the world's your lobster :) The whole of the south coast at your finger tips - you havent given a budget - if I were you, Id check out the big hotel chains and see what last minute offers they have.

    I have bumped this thread to whole heartedly recommend the Marriott in Cardiff City Centre.
    Got a 2 night Escape Shopping Break deal which constisted of:
    2 Nights in Queen or Double room
    Full Welsh Breakfast Each morning (in room if required) worth over £15 each per day (didnt need to eat through the day after it!!!)
    3 course Dinner on 1st Night worth up to £21 each (
    Afternoon Tea on 2nd day worth £10.75 each
    Parking worth £14 per day
    4* Hotel, staff were great and the service was perfect - couldn't fault a thing
    Hotel was right in the centre, next to the Cafe Quarter and the Library
    And it cost £250!!!!!!!
