What is considered a reasonable time for a purchaser to change their mind over a potential purchase bearing in mind that the goods required cutting rather like granite work surfaces and were to be fitted 3 working days after the sale?

As your goods were to be 'custom' made, I would assume you have no cooling off period.0

AFAIK in a shop, once the order is complete there is no comeback, unless the goods are faulty, or through a gesture of goodwill.
Online there is a 7 day distance selling rule, but this may not apply to customised goods..0
