In the bathroom we want to install an extractor fan, what is a reasonable quote and do they need to install a new fuse box (current fuse box circa 1973)?

You would almost certainly require RCD protection to the circuit that the fan would be supplied from (lights probably) which in a 1973 board is almost certainly not present. There are other ways than changing the fuse board - such as fitting an RCD fused switch to the circuit or an RCBO to replace the circuit breaker (if compatible.)
The cost of the fan install will depend on what floor it's on, how easy access outside for ladders is and what sort of fan you want eg on own pullcord, timed with lights, humidistat

I charge around the £250-300 mark for a new fuse board. Supplied, fitted and fully certified. Make sure you get the cert after! Use anyone who is NICEIC, NAPIT or ECA registered. You may need earth bonding upgrades but I expect that you should have at least 6mm earth to your water stop point and gas meter. When changing a fuse board sometimes problems are shown that older fuse boards didnt pick up. These extras if they occur are usually extra if it takes longer than 30m-1h to fix. A fan can be anywhere from £100-£350 depending on what you want.0
