stollen bread and butter pudding?

hi everyone,

am a regular reader/lurker(hate that term!), of collectve wisdom on this board and wondered if anyone had any ideas for using up left over stollen?

i was thnking of a sort of bread and butter pud, but not sure what would happen to the marzipan in the cooking? anyone tried this, or got any other ideas for the leftovers?
Of all the things I've lost, I miss my mind the most..... ;)

    As I recall it makes a very good bread and butter pudding, the marzipan kind of melts a bit into it. Just don't put quite as much sugar in there as you would with a normal bread and butter pudding since the stollen is already pretty sweet.

    Other than that stollen can make a nice spongy bottom for a trifle.

  • Made this over the weekend and it was great, our visitors really liked it. Just put slices in the bottom and covered with egg custard, no added sugar as the cake was sweet.

    Thankyou so much for this idea! Its something I never would have thought of, but am making it tonight. Panetonne makes good bread and butter as well :)

    WHils on the stollen subject I made mine this year, when usually I get one from LIdl. I followed a recipe but it wasnt as stodgy as the lidl one. ANyone else find this? Not had the usual hat-trick of cake either - we tend to have one trad. English cake, a stollen and a panettone. My lovely Italian Neighbour whou brought us one every year died recently so I have been 'off' the panettone. Couldn't bring myself to put cake in a 'bread' pudding. Brioche is meant to be good though.

    i have used brioche for bread and butter pud, only used marmalade instead of butter, lol!! was delicious!!!
