Useless solicitor getting interest on our mortgage - advice pls!

We agreed to buy our house from our landlord at the start of April - no chain, no estate agent, mortgage all in place, supposedly no problems.
Our solicitor has been useless - taking forever, repeatedly asking for info that we've already supplied before then admitting that they already have it etc etc.
Anyway, after messing us about for months (they have had all the necessary information to draw up the transfer docs since the end of June) they finally emailed us all the transfer documents etc at 4.30pm on 9th August. Due to husband's work the earliest we were able to get these all checked (there were several errors) and in the post was Friday 12th August with next day delivery.
As they have been so useless we requested a completion date of Friday 26th, giving them 2 weeks to cash our cheque, request the mortgage money from the bank, etc.
I emailed them on Tuesday 16th to ask whether they had received everything. No reply, so I emailed again on Friday 19th and also sent copies of our Buildings Insurance (which we had been told was necessary for the mortgage company to release the money) showing this starting on 26th.
It now transpires that the solicitor had already requested the money from the mortgage lender and must've had that money since at least 13th August - and we are of course being charged interest by the mortgage lender since then!
This equates to quite a lot of money which we obviously can't really afford. Also, presumably, the solicitor has that mortgage money sitting in their account earning interest.
So...my question is, what can I do about it?? And should the mortgage lender have released the money before any proof of buildings insurance had been seen? And before we had agreed a completion date?

Have you made a complaint to the solicitor? All interest earned (over a de minimis amount) belongs to you, the client.0
