Car Written Off, Can I Buy It Back??

My car has been involved in a front and back end crash, and I've been told it's a total loss. On a car forum I go on, a few guys on there said I should buy the car back then break it and sell the parts on (The engine/box/brakes/doors/interior are all untouched, and are worth decent money). A few on there have done the same. However, when I asked my insurance company, they say I cannot have the car back, as "They don't do that sort of thing".
The forum guys reckon as I'm still the legal owner (I haven't been offered a settlement figure yet), I can accept a reduced figure and still have the car, and they cannot say otherwise.
So what I'm asking is, legally can they refuse me to have the car back with an agreed reduced settlement figure, or are they just conning me as they'll have a contract with a registered salvage firm and will get more from selling it on to them??
