Chicken and Corn Casserole
2 Chicken Breasts
1 Large Onion
1 Tin of Chopped Tomatoes
1 Tin of Sweet Corn
Salt and Pepper to season
Warm oven to 180
Brown the chicken breast in a pan, then place in a casserole dish
Chop the onion and sweat in pan
Pour in tin of chopped tomatoes into the pan
Drain corn and pour into the pan
Season
Stir the mixture until simmering
Pour the mixture over the chicken breasts and place in oven till chicken is fully cooked.
We usually make the whole thing in the pan with diced chicken breast in the same way you would stir fry.

My fav is the honey and wholegrain mustard. Also nice is honey with lemon juice and some grated lemon rind and a little chopped herbs (anything you have) it's like a healthy lemon chicken from the chinese - don't go overboard on the honey though.

Teriyaki sauce is yummy with chicken or fish especially salmon. Just pour lberally over the chicken and marinate for a couple of hours, then grill.0

I really like chicken breasts with chopped red onion and cherry tomatoes, garlic, oregano, black pepper, and a splash of white wine. (from bbc recipes website, very useful as you can search by ingredient)Moneysavinghopeful :rotfl:0
