Something to make chicken breats yummy?

Hi all,

I want to have like a grilled chicken breast with vegetables and potatoes, but i want something for flavour as this will be bland. Im on a diet after xmas ya see!

Does anyone know of a nice marinade or something i can use on the chicken breats? It doesn't have to be strictly money saving. Sorry its a bit OT!

    why not try some honey and wholegrain mustard just mix couple of tbsp of each together and rub on top of each breast cook in the oven really really tasty, but I would butterfly the chicken if it is reasonably thick.

    I'll second that - and to add a bit of a kick I'd suggest adding a touch of grated root ginger too or substituting for the mustard.

    You can buy tiny packets of flavour, I think they're called Shotz. Only about 40p I think.

    rub into skin some chilli powder,garlic or any other seasoning u fancy before you grill the chicken

    My dad makes a marinade for chicken for me (for when they have beef) based on a super yummy one we have in Crete each year, as follows. Sounds complicated cos lots of ingredients, but its not at all!

    chicken in chunks for kebabs, or beaten between 2 pieces of cling film (or in a sandwich bag) for griddling
    olive oil
    small garlic cloves
    oregano or thyme
    white wine (optional)
    lemon or lime juice

    prepare the chicken, place in a dish, or a large freezer bag on a plate. crush the garlic (the small one's too small to use for other stuff) with the skin still on. Add to the chicken

    add a really good 'glug' of white wine, and slightly more of olive oil. add the juice of a lemon or a lime (from a bottle will do if need be) and a good pinch of your chosen herb.

    mix all the ingredients together well, leave in the fridge for at least 20 mins. Best for 6 hours or more, turning from time to time

    cook til well done

    Did this the other night for some meat eating friends, and it went down a treat.....if you like spicy!
    Chicken cut into strips, marinaded overnight & then done on George & also griddle pan.....had quite a lot to do, so was saving time cooking on both at once. I served with tortillas and all the extras, but you could do with potatoes or pasta.

    Marinade
    Olive oil
    Oregano
    broken up dried chillies
    smoked paprika
    cayenne pepper

    Used same marinade for myself but used chunks of onion, mushrooms & peppers and cooked in George. Certainly had a good kick to it, but you could leave out chillies if too much.

    Mix plain yoghourt with some Indian spices/paste for a tandoori type marinade. Marinade chicken overnight or for a good few hours and grill/griddle/pan fry/bake.
  • For something quick now and again I buy the Schwartz jars of spices and discovered how nice the Chinese Garlic Chilli and Ginger is nice sprinkled on both sides of the chicken breast before cooking in George. I have it with potatoes and veg or pasta with a homemade tomatoey sauce.

    Also, again for something out of the ordinary slice open the chicken breast and fill with garlic and herb cream cheese. Seal it closed again by wrapping with Parma Ham or a rasher of bacon. Wrap in tin foil and then pop in the oven. This one is lovely and still very healthy really.

    i bought a reduced jar of apricot glaze to add flavour to chicken from tesco, it's loveley.
    soy sauce and sesame seeds are good
    and a thin spread of marmalade 10 minutes before the chickens cooked sounds gross but is really rather nice and not bad if you use weight watchers/diet brand.
