Florida 1st timer Advice Needed

Hi,
I am planning on going to Florida end Aug 2012 for 2 weeks (2 adults & 1 kid aged 10) I have not been before, we want to stay on International Drive area & have car hire to get to all attractions. Is it best to book a package deal? Or is it best to book flights seperately? What is average cost? What are best attractions to visit? Flying from any London airport or Bristol as we live there. Is it best to book early?
Can anyone help?
Any advice would be gratefully received, I haven't got a clue.
