It's a very good question - I have known house sales go through quicker than gas and electric transfers. It's not like the new company have to pop to your house and install their own pipes, is it? It's frankly ridiculous IMO.0

Timeline for supplier switch is as approximately such
14 days from date of contract agreement for cooling off;
Notification to industry for attempt to take over, 7-9 days after this for objection window (to allow other supplier to object due to outstanding debt).
Once that has passed without an objection, at this point a notification for a firm switch is received (ie to confirm registration of the supply).
There is then a period of time (10 days or so) for the supplier to appoint there own Meter Operator etc, receive metering details, send change of supply reads provided from the customer.
The timeline can be extending in instances of a customer withdrawing and coming back to a company as to allow the existing change of supplier process to complete.
