Mortgage advice - Joint ownership

Morning everyone,
I’ve been a long time reader and browser of the forums and have always had my questions answered, however this time I require some help.
I will explain a little about my situation so that all the information you may need is included.
I have just graduated from University and landed myself in a good graduate engineering role in Scotland. I have just bought a flat with my girlfriend of two years but have only applied for the mortgage in my name. It is now one week until completion and I was under the impression that she could just be added to the deeds in name to ensure she is also an owner of the house. My girlfriend and I had both interpreted this from the mortgage advisor we had seen.
After speaking to my solicitor today it appears that this is not possible and that the mortgage and deeds go hand in hand. This means that she cannot be added to the mortgage or deeds and I will be the sole owner.
She has provided half of the deposit and we will be splitting bills around 70/30 however, I want the house to be 50/50.
What is my way forward to make sure she is an owner of the house as well?

Apply for a joint mortgage and have the contract changed so you both buy the property. The alternative is a transfer of equity to add her to both afterwards. You'd probably have to wait six months to do it and it will cost you between £300 and £500.
As you've been told, you can't be party to ownership without being party to mortgage.

I don't have time to apply for a joint mortgage I don't think... It's only a week until completion. Plus:
I left a bit of info out by mistake. The reason I applied in my name only is that she will be going back to University to study and will not have an income. I've been told that because she doesn't have an income, she can't be on the mortgage. This is the sole reason we didn't apply for a joing mortgage.
This was a mortgage advisor in Scotland. It was about 8 weeks ago that we saw the advisor but I came away with the impression stated in my first post, that my girlfriend could be added to the deeds.0
