when to harvest beetroot

Not sure when I should pull up my beetroots??

Some of my plants (those that have survived the sparrow attacks!) have quite large (2 inch diameter-ish) bulbs now...I can see these as the top of each bulb is above ground level. (is this how they're supposed to grow??..i'd assumed that the bulbs would be totally undergound).

NOt sure whether to pull up now..or if they'll be ok staying in the ground.

    You can eat them whenever you want, I start at about golfball size, till huge.

    And yes, that is how they are supposed to grow.

    What is your forte? Big heavy ones at 600 grams, one head is enough for a beetroot cake.

    Golf balls like Lotus was saying as a side dish cooked to perfection or to pickled if you like them tasting of vinegar :D

  • just pick them when they are at a size that you prefer ;)

    but if you let them get too big beetroots can go a bit woody
    saving money by growing my own - much of which gets drunk
    made loads last year :beer:
