Transferring money from a joint account to single one

My mum inherited some money from her parents and the cheque was banked into a joint account with her husband.
She has already banked with the Nationwide and wants to invest some in ISAs and open a new account with the Nationwide.
What documents does she need to open a new account and where is the best place to invest the inheritance (looking for best interest so could go for any accounts) She lives in France so will this affect her ability to open a new account?
