I need to supply a building society with an original bank statement as ID to open a new account. I don't particularly want them to
see details of my balances - can I block these out? My name and
address plus branch address and account number would still be visible.

I agree that the current demand to see bank statements for ID checks is intrusive. I have a couple of current accounts but if I have to produce a statement I just produce one for my NatWest Step account. That always has a balance of around £1 and just shows small amounts of cash being paid in at branch and then transferred into my eSavings account.
If proof is needed of a bank account then a personal cheque (or preprinted paying in slip) should suffice in my opinion. I suspect that statements are being requested because a number of people no longer have cheques with their current accounts.
Usually statements printed by yourself online are not accepted as evidence of ID. Yet many people now opt not to have printed statements posted to them. Does the building society not offer other options for such people?0 -

There are potentially 2 item required, one for "address" and one for "ID" from lists often referred to as List A and List B. Obtain the requirements document from the building society and try to choose something more acceptable to you.0
