Bags packed ready to go....

Does anyone know whether it is still possible to turn up to a travel agent or even the airport with your bags packed ready to go and get a really good very last minute holiday deal? I am looking to do just that with my family and am very flexible on where and when we go and am even prepared to travel on separate flights upto 48hrs apart.
