Red wine

I have just come across an almost full bottle of red wine that was opened on Christmas Day (don't ask how THAT got missed :confused: ).

My question is, will it still be OK to cook with? I had it in mind for some braised steak.

    Unless it was sealed with a vacuum seal, I would say probably not.

    However, you could try a little and see. If it tastes OK, it might be OK for cooking; if it tastes "off" then it won't be any good in cooking either.

    I'm sure a resourceful person will come along soon to let you know what you can sensibly do with gone-off wine :-)

    I would think it should be ok :) we often have red wine opened and unused for days on end and still its perfectly drinkable! but then thats normally a couple of days rather than a couple of weeks. Smell it, taste a little and see.

    I've had a taste, and have to say I wouldn't fancy a glass of it, but then I'm a vodka girl by habit! Certainly doesn't taste "off" though, so braised staek here we came!

    Taste it - if its nice enough to drink, then its good enough to cook with!!!! im a great believer in only using wine in cooking that i would be happy to drink (so thats any then!!!).

    Get someone who likes red wine to taste it. If it is OK to drink it is OK for cooking. If it is nasty to drink, pour it away as it will spoil your food.

    More than a few days is pushing it for red wine unless you have vacuum sealed it with a Vacuvin type device. Keeping it in the fridge helps it last longer though purists might not agree.



    Inside me lives a skinny man screaming to get out, but I can shut him up with cake, chocolate, red wine or good malt whisky. Unfortunately I cannot shut up Mrs A who keeps telling me to stop porking out and to get down to the gym!!!!:j :D

    You can still marinate meat in this wine over couple of hours with herbs and spices.
    We used to collect leftover vine specially for meat marinade. Steaks get more tender and juicy, especially if you like them well done.

    I have a bottle of red wine that was opened and then for some reason put away again.

    So now I have a full bottle of gone off red wine, can I cook with it? are there any uses at all? I really hate waste and pouring a whole bottle of wine away just seems a horrible waste.

    You won't be able to use it as wine - it's now vinegar, so put it on your chips :)

    Dont have a chutney recipe but have a fab onion marmalade one which is great with meat, cheeses & most veggie dishes. In fact I made a batch today as it never lasts long in our house!! Makes about x4 1lb jars.

    1.25kg onions
    3 tbsp salt
    1kg sugar
    500mls red wine vinegar
    2tsp caraway seeds

    Chop onions cover wih salt leave for an hour

    Rinse & dry

    Add sugar, vinegar & seeds into saucepan, boil for 5mins then add onions. Cook for a couple of hours on a low heat until the mix becomes thick, onion translucent & brown. Can't go wrong.
    Put in sterilized jars.

    You could try it in this recipe - it's lovely as it is made with red wine vinegar and, as PenPen says, that's basically what you have now :)
