Chocolate courgette cake (traybake style) is very easy to make, then cut into quarters and freeze. Lasts months (or as long as you can resist if that's shorter!)0

Nice recipe for courgettes.
Grate a couple of courgettes. Add to pan with a bit of oil (I use olive or corn). Add a couple of grated carrots and grated garlic and fry. I fry until bits start to turn brown and crispy but you can just soften if you prefer.
It is delicious, and even nice cold spread on a piece of bread.
I have frozen this in the past and it heats up well in microwave.£2012 in 2012 = £34.440
