    I think the minimum spend was £15. So you paid your £15, and they gave you a laminated ticket with a number on it. When you ordered a drink or food, you handed over your ticket and they took your spend off the total on the ticket. I don't know how they were keeping tabs on that: whether there was something on the till, or whether there was a sheet behind the bar they were noting things on.

    Now, that could work both for 'time in' and 'spend': you charge, give them a ticket and note the time of arrival.

    You might want to do it with a duplicate book, so that they have both a note of the time in and a note of what they've paid to you.

    Thanks for all your replies everyone, they've been very helpful.

    I saw the business advisor today, he too was very helpful and positive, but gave (constructive) criticism where required. He's helped me work out an action plan and given me a few clear tasks to work on and take back to him when I see him next.
