Good morning all, I have 2 big bags of big old ripe tomatoes from my sister, and the only thing I can think of to do with them is chutney. Can someone point me in the direction of a really simple recipe for making this, as I cant find one. If this works out I am hoping to gift some jars back to her for christmas/winter.

This is the River Cottage Recipe:
For the tomato salsa:
l 500g ripe, tasty tomatoes, diced
l 1 shallot or 1/2 small red onion, very finely diced
l 1-2 tablespoons tiny capers, rinsed
l A small squeeze of lemon juice
l 2-3 tablespoons rapeseed or extra virgin olive oil
l A tiny pinch of sugar
l A few mint or parsley leaves, finely chopped
Directions For the tomato salsa, combine the tomatoes, shallot or onion, and capers, if using, in
a bowl. Whisk the lemon juice and oil together in a small jug, season well with salt
and pepper and add the sugar. As to the salsa with the chopped mint or parsley and
toss lightly; set aside.0 -
This is an easy recipe:
Red onion, Chilli & Tomato Relish,
1 sml red onion, finely chopped
6oz/225 gr ripe tomatoes
1/s sml red chilli, deseeded and finely chopped
1 clove of garlic, crushed
1tablespoon dark brown sugar
4 fl oz/120ml balsamic vinegar
Put inion, chilli, garlic and tomatoes in a pan and blend until finely chopped. Add sugar & vinegar. Place pan over a gentle heat without a lid for two hours. Towards the end of cooking stir frequently to prevent sticking. Season to taste and decant into sterilised jar. I've swapped some of the balsamic with various proportions of red and white wine vinegar and it's always turned out fine. It's also fairly easy to scale up to use whatever amount of tomatoes that you have.0 -
