Holiday suggestion help appreciated

I'm trying to plan my hols for next year preferably May/June or Sept for myself and OH. We're struggling with location, having been to most of Europe and North America and not wanting to travel as far as Oz/SE Asia. We've got a budget of around £2500 and we were thinking 10-14days. We honeymooned in Italy half board at a luxury hotel and I was hoping to do this again.
We've thought about Cape Verde islands, a Greek island, Mexico or South/Central America. We need something to do during the day not just lounging around so some historical sites/culture would be fab. Not into a mad social scene like nightclubs but don't want to be too far out either - at least on a bus route. Probably half board? Had looked at Cuba but most of the hotels seem to be in massive complexes away from the local culture. Don't mind not being on the beach if there's a good pool.
Has anyone got any suggestions of nice 4/5 star hotels/locations that would be relaxing and luxurious but have plenty of sights?? All help is much appreciated

have been to cyprus in september, plenty of historical sites, including a visit to northern cyprus( kyrenia)
we hired a car. very easy to drive there. they drive on the left.
we stayed at grecian sands, lovely hotel, quite a few weddings when we were there. around a 15 min walk into ayai napa, plenty of life in september but not crazy like i expected it to be, nissi beach is not far from ayai napa.0 -
I would 2nd Cyprus its beautiful lovely places to visit limmasol and paphos both great, you've got the old fishing villages, troodoss mountains plus lovely people and gorgeous food
