You could slice it then freeze it, and take out a slice when you fancy one.

A friend said she'd give me some rhubarb this afternoon so I'm divided between this cake using rhubarb, or some jam. Hmmm decisions, decisions.

Looks delicious. I made a similar streusel cake/tray bake using gooseberries on one occasion and plums on the other. I adapted the recipe slightly and added porridge oats, honey, and chopped almonds. In fact I have some sitting on my cooker as I write this. It is truly scrumptious.
