Using/Defrosting Frozen Apple?

Ok, so a couple of months back I had a major glut of apples, so sliced and froze about 11lb of them for later use.

Now I'm at a point where I want to use them and I'm not having much luck.

So far I have only tried something simple - stewing to use with custard.

First time I put them straight in a pan of water - they went very brown very quickly.

So next time I tried defrosting them, still wrapped, in the fridge first - they went very brown very slowly.

I know some will say brown is not a problem, but my kids don't see it that way and won't eat brown apple.


2lb down, 9lb to go and I don't want to waste any more.

So - how can I use the apples - in anything - in a way that they won't go brown?

    When i freeze apples i always cook them first then freeze them in small portions.
    I cook them in the microwave.
    Chop them up place in bowl and cook on high for about 5 mins depending on how many i use. Do not add water. Once they start to go mushy i take out of microwave and add sugar.
    Don't know if cooking your apples this way will stop them from going brown but certainly worth a try. Hope this helps.

    Did you freeze them raw? If yes then I do not know of anything you can do to cook them without them going brown. You may be able to do a crumble from them frozen if you get your topping ready first and if you can break them up sufficiently. If I have time I blanch my apples before freezing but we will eat them brown anyhow - they go this colour once you have added cinnamon and brown sugar anyhow. Hope that helps a little DK

    Try defrosting them in water with a splash of lemon juice.

    Stick a plate on top of them to make sure they are all underwater.

    Don't take them out until the very last second before chucking them into your cooking pot. Apples will go brown in five minutes flat no matter what you've done once they are peeled.

    emilyt - We don't have a microwave, so I can't try your idea, but I will keep it in mind should I ever be in that position again.

    dustykitten - they were frozen raw yes - kept in a lemon juice solution between prep and freezing. The kids strangely enough don't like crumble, but I will give it a try in a pie.

    squeaky - I will give that a try too - hadn't thought of putting them back under water to defrost. These apples actually don't brown up much at all when they're fresh and raw, which is why the frozen ones have caught me off guard.

    ON the subject of apples - we have just had (from the freezer) a concotion that I made up last week - crumble topping, covering stewed apple and mincemeat - great way of using up elft over mincemeat, like a kind of apple struddle thing.
