Zuccini Agrodolce
3 tbs (I use a dash but that's what I wrote down!) Olive oil
large clove of garlic, finely chopped/crushed
1 lb 2 oz (approx!) Courgettes, top, tailed and cut into ribbons
3 tablespoons water
3 table spoons white or red wine vinegar
6-8 anchovies finely chopped into a puree
3 tbsp raisins or sultanas
3 tablespoons pine nuts (although recipe doesn't ask I lightly toast these first and throw them in right at the end)
Garlic and oil into frying pan, then courgette untill just coloured, add water and vingar, reduce heat and simmer for approz ten mins, stirring often so nothing catches, increase add other ingreadients and stir till all courgettes are both soft and lightly coated with the dressing. Serve hot or completely cooled to room temp as a salad. We prefer it cold.
I serve this with flat bread or rice or as part of a mediterreanean style spread, or just greedily from the fridge by itself.
Sounds great and a colleague with an allotment just gave me 3 courgettes yesterday!0 -

if the anchovies are for the salty taste maybe replace with capers?Be your own superhero :j0 -

I find achovies to be more than salty, but sort of umami...which of course is the thing your after to balance the sewwt/sour here. Maybe a little marigold stock would add the essential savoury flavour with capers? For those not opposed maybe ''chinese salt''/msg (I don't know I've never used it).
Another thing to try might be, if its part of a spread, eating it along side something like spanakopita, or some other marriage of feta and veg, because the cheese in the same meal if not the same dish might do it.
See, lotus, spanakopita, a delicious vegetarian meal that isn't ''vegetarian'' for the point of it, but rather one of those thingds I refered to that stood the test of time on its own merit and happens to be meatless. The sort of thing I can never think of off the top of my head but that we might eat on a meat free night.
Its the best way to look at vegetarian or low-animal product use food if you ask me: what you have available, not what ''is missing''.0 -
I've been watching the Earthlings video a bit when I have time. I'm at 21 minutes now and haven't seen anything that relates to the UK yet! Only American practices.
God it's boring as well. I hope it picks up a bit.Freedom is not worth having if it does not include the freedom to make mistakes.0 -

I'm not saying there isn't a point to it, but it has to be viewed whilst knowing the UK policies on slaughter and other legal acts.Freedom is not worth having if it does not include the freedom to make mistakes.0 -

I think its such a shame this myth exists. As a meat eater I think this. I think any pre-made food is off my ''want to eat list'' and that's the expensive way to eat anything. Some of my favourite meals happen to be vegetarian, cheap..especially if you grow your own, very healthy and absolutely delicious. More exciting than many meat staple meals people consider standard fodder.0 -

I've seen plenty of UK practices as well. My uncle used to work in a cattle farm and basically said that was what happened there- policies or not. The video didn't make me vegan- a combination of things did. I was already veggie and then went vegan. I was not suggesting the video should be used to make people veggie, I was saying it was once of the things that affected me and helped my decision to go from veggie to vegan. The video is american so yes it is all based on US premisies.Be your own superhero :j0
