Pineapple and mixed berries?

My brother wraps pineapple in foil and bakes it. While it's cooking he simmers some frozen mixed berries then pours it over the pineapple when it's cooked.
Sounds lovely to me.
But being a tightwad I thought I'd try and invent a different way of cooking it, in one pan maybe.
So tomorrow I'm going to cook the pineapple in the pan on the top, in some butter (or syrup?) then put the berries in the same pan for a few minutes, with a drop of water to make juice.
Would this be nice do you think?
Or wrap the fruit all together in foil, throw some sugar or syrup on, then bake it?

Wrap it all up together and see what happens. Don't think it would need any sugar though as pineapple should be sweet enough. Can always sprinkle some on after cooking if it needs it.

Hi Pineapple lovers, before you peel the pineapple, scrub the skins really well. After you have peeled it, cover with water, and soak the skins for 24hours in a non-metallic bowl. Boil until skins are soft. Strain, add sugar, bit of ginger, boil some more, and hey presto, a really nice cordial.
Now, you would have thrown those skins out, wouldnt you?Loving the sunny days!0 -
