Fruit pie recipe

I've got until Sunday evening to make a fruit pie, so I need to make a few practice pies. Can you point me in the direction of a good recipe?

This is fun, being a fruit pie virgin.
I went out today and bought a decent set of scales and a rolling pin.
I've just made the pastry which I found entertaining; I've always enjoyed mixing cement.
It all rolled out OK and is now in the fridge whilst I simmer the apples.
I've manage to work around my mistakes. No mixing bowl (forgot to buy) so used large saucepan, no apple peeler so peeled with large knife. I need two wooden chopping boards so I can roll the pastry on one and cut the fruit on another.Happy chappy0 -

you don't need to roll pastry on a board - worktop will do, that's what I always use.0 -
Latest update: pie is in oven. Pastry quantity perfect, fruit levels a bit low. Smaller dish or more fruit for the next one.Happy chappy0

I made two large apple pies and took them along to a new year's eve party last night. The feedback was very good! All of one was eaten and half of the second by 5 people. It was a pretty basic recipe; Bero pastry recipe(flour, pinch of salt, butter), plus apples with a small amount of brown castor sugar added.Happy chappy0
