Removal of chimney breast questions...

Hi guys
I have been researching on the removal of chimney breasts and I have a few questions. My house is a small 3 bed semi with your normal chimney breasts which are present in the downstairs dining and living rooms and the 2 bedrooms directly above these rooms.
I want to remove the chimney breast from only the downstairs living room and the bedroom directly above. I do not want to remove the chimney breast in the dining room because I want to maintain a fireplace in that room and I do not want to remove the chimney breast in the upstairs bedroom above the dining room because it has a nice fitted wardrobe which I do not want to remove.
My questions are as follows:
Do I still need a Chimney Cap if I am only taking the chimney breast out of the downstairs living room and the bedroom directly above this room. I am leaving the chimney breast in the dining room and bedroom directly above that.
Do I take the chimney out all the way through to the loft?
Is it easier to remove the chimney breast in 2 rooms which have the same chimney breast going through rather than removing the chimneys in 2 downstairs rooms and leaving it in the 2 upstairs bedrooms?
Does the builder simply plaster over the removed chimney wall?
What does the builder do with the flooring to prevent damp and etc?
What do I do in regards to sound insulation and damp prevention?
Any other things to look out for?
What sort of quote am I expected? I have been quoted £750 for removal of the chimney breasts in downstairs living room and the bedroom above it. This includes plastering and skip hire.
