It might be way out of budget but a couple I knew bought a bed as a joint first anniversary gift to each other, their logic being that paper is made of wood. So something made of wood might work in a 'thinking outside the box' kind of way...

I think it would be nice to just write a letter, recounting your memories of the proposal, the wedding, the honeymoon and your first year together. Would be something he'd keep forever.
Or, tickets to a show or similar?

My DH keeps asking for divorce papers for our 1st anniversary....I just tell him that I don't love him that much to give him what he wants!!
We will be on our honeymoon then, so will need to have a present that is easy to pack

My oh did the inthepaper website thingy where you write your own newspaper front page and they send it to you. He wrote up about our wedding day, uploaded a wedding piccy and put how he felt etc in the article and then went out on the morning and bought a paper and stuck it on the front and said oooh look at the paper....
