Do last minute deals exist? Thoughts?

Hi, need a bit advice as it’s been years since I booked a holiday.
The option to go away with a friend has come up, however, I’ve never been away during the school holidays so didn’t realise how expensive it can be!
I am looking to go away on Sat 6th/Sun 7th Aug coming back on Thurs 11th/Fri 12th Aug. I am going with a friend who lives in Scotland who is coming to London on Friday 5th and leaving Saturday 13th
I am wondering whether to hold out for a last minute deal nearer the time (do they even exist?)
Would this be feasible especially as we are not fussed re accommodation - AI, HB, and B&B (we need twin room or we’ll share a double)
No Children so no kids club etc needed.
Preferences:
Bit of sunshine!
No more than 5/6 hours flight
Spain seems to be relatively cheap but not sure how veggie friendly it will be for me?
Like the idea of Turkey/Greece but seems to be popular and pricey.
Not wanting a clubbing holiday, more of a chill out break by the pool with the option to day trip if we’re bored, or even head into the local town/village
Doing an initial scan online shows that flights only can be about £300.
Your thoughts please - book now or ‘wing it’ very last minute and see what’s out there??

Flights are going to be expensive on those dates.. check Canary Islands in Spain , Fuerteventura & Lanzarote are quiet places with a toursim mainly english & german, so you should be ok with veggie options... Ryanair and Easyjet both fly there.
Check Booking for cheap hotels & apartments, if you go with frieds you can share an apartment and split the cost, comes up much cheaper..0 -
Think you can get a bargain if you are prepared to scan the sites loads and take a chance on not getting one at all. In the past I've always found Direct Holidays good for deals but since they have joined forces with Olympic Holidays & Thomas Cook not as much as they used to. The less 'must-have' requirements you have the easier it will be.
Due to the times we live in I think the travel agents have had to cut back on the amount of holidays they have to offer so less bargains out there.
Good luck, hope you find what you are after. Currently scanning for a bargain myself for my family of four so fingers crossed for us both.0
