Local football club as well, might be difficult to get a spot as they will be quite popular, but that gives you something to do 11am-3pm every Saturday where theres a home game.

As for business model for selling chips to drunks, you'll need grated cheese. Can't have drunken chips without cheese.

My mate runs a burger wagon with his wife.

You ideally need a transit to store stuff in and to tow your trailer to the site. You can go for an all in one unit, but then run the risk of breakdowns which = no revenue. At least with a trailer unit you can use the family car to tow it if necessary. There's the cost of the trailer and equipment.

Gas bottles are an expensive way of cooking. Most burger wagons stick to griddled food rather than chips - main reason is the high cost needed to keep a fryer at the right temperature during the idle periods. As it's a nighttime service you'll probably need to use a generator. Could any residents or business be affect by the noise?

During the day you'll have to run around buying stock, banking etc.

Why do you need to employ staff? Aren't you going to run it yourself? You won't make much if you have to pay wages. My mate works 4am to 4.30pm 6 days a week. He hasn't had a holiday for 7 years.
    The man without a signature.

Mate bought a catering trailer without looking into it properly. He had a lot of hassles finding a spot
where the property owners would let him and the council agreeing to.

Health & hygiene is not a big problem, Fairly cheap for a course.

Cash in hand for staff a big no no. Not sure how you stand in this case but with the companies i used to
deliver to they had to verify self employed people were really self employed. Or the company were liable.
Big fines for tax evasion. Checking is down to you i think. Double check.

Pocketing the money... Happens big time. Giving free food to friends or giving out too much change to
them. Hand them a £5 and they hand back change for £20 sharing the profits later. Or just handing over
the money. Seen it done. Had free food.

If you dont use someone you can trust then your profits WILL be down.
Censorship Reigns Supreme in Troll City...

Fully aware of that. My business partner has been in the security industry 30 odd years. This is the only reason the club owner has allowed it to go ahead. He has turned many many others down.
He is also head of security at the club.

I have no concerns with security.

Pitch is perfect. It doubles as the smoking area for the club so plenty of folk around throughout the night. The club does not serve food and there are no food outlets in the area.

Regards employess, i'm sure it can be worked aroud. My partner already has lads working for him though i'm not sure how payment is made. (It is done by an accountant)

    Thanks for ALL the replys.

Sounds like a lot of the risk areas are covered, or at least considered :) And you will find honourable staff out there if you are paying properly and choose wisely, and let them know that you don't mind them upsizing for friends and free chips and coffee for door staff (especially if your partner already manages the door), or whatever the arrangement is, so they can play fair). Just be consistent with them (so don't you go giving away burgers or taking cash from the till during a shift) and show them it is a business environment even though it involves fuel for lairy (larey? Leary?) customers.

If you are in the smoking area, are you close enough to the building that you could tap their power and pay them for leccy as you go? 32A should be more than enough, and 16A may do if you have a gas griddle and just power fryers, chillers and lights.

The one thing I could see causiing friction is if you sell cans of pop, that is the clubs main business (massive markup on postmix pop), so you may not be able to sell drinks. Or if you do, what is to stop people taking them back into the club? If management see 80p cans from you where there should be £3 pints from them, the cordiality may run out, so arrange the parameters in advance. Also, are your punters allowed to take the food into the club? If they are, the smell of chips will mean you don't have a quiet moment I'm sure, but their cleaning costs will go up and it'll upset club staff if you have greasy wrappers everywhere. Not insurmountable, but think it through, and expect to offer the club owner a %age when he realises you're making cash at his staff's expense :) But if he let's the chips in, I can't see you having a quiet moment once people get peckish and smell them.

But not real cheese. "cheese analogue" is cheaper and drunks can't tell the difference.

It would make sense that the stall/van will compliment the club and not be a rival. Therefore, it might be wise not to sell any rival products, even drinks. Looks like it could be a nice little earner though
