But taking a holiday in early July is very different to wanting to book for mid-August (as the OP does) - which is smack in the mddle of school holidays everywhere in the UK.

The OP hasn't said where she is flying from (regional airports often have high flight supplements) or for how long (although I'd guess it was for a week).

although i live in scotland, might need to point out i actually flew from Newcastle

Newcastle schools break up for summer holidays on 20th July so your holiday was outside English school holidays when you flew from an airport located in England.

I've messed about with dates on various holiday websites and as soon as you put dates in over school holidays the price usually rockets.

On the Olympic holiday website, I can book an apartment/flight to Kavos for £151 departing 15th July (still in school term).
The following week, the identical holiday is £312.

But departing September 9th (after the schools go back), there's lots of s/c accommodation priced at £208.

Was that booked as a package or did you book the flights & accommodation separately?

Did you book online or through a travel agent?

How many people was it for?
    i.e. were there 3 sharing a room?

    Was your luggage allowance 15kgs?

    Checked out Holidaymate website.
Was it the Pineta Park Deluxe hotel?

Pineta Park De luxe Hotel, Marmaris, Marmaris

Travelling on dates that the OP wants, it's way more expensive than what you paid - and I don't even know what the luggage allowance is or if the £537 includes transfers.

I agree with the other posters, the OP is going to struggle to get what she wants for her budget.

im just back yesterday after 9 days ai in a gorgeous hotel in marmaris.
this was in the height of school holidays and paid £345 each inc trsfers and luggage, so yeah it can be done x

...but the OP suggests £300 for two people

That's how I read it too but to be honest if she wants to go August (which is height of school holidays as far as tour operators are concerned, whereas early July is not) then even £300 each would be pushing it.

We regularly travel South early July to get a bargain flight rather than pay crazy prices to fly from Scotland.
Similarly, after 16 Aug you can fly from Scotland really cheap as that is roughly when the school hols finish up here
