    my mum always uses marmalade for hers. she makes about 10 christmas cakes every year!

    I only make ONE because it's traditional - and the kids like to decorate it (we had BUM written accross it two years ago - now - I supervise!!) - I don't know anyone who actually LIKES IT!

    Apricot jam is to stick the marzipan to the cake and also seal the fruit cake. You can buy the cheapest pot going to do the job. I've seen some for just 23p. It does work best with marzipan on a fruit cake. Remember to warm it through though before applying. Also if you keep it in your fridge afterwards it will last for absolutely ages - ready for the next cake;) .

  • In future I'll use marmalade - in the meantime has anyone got any useful suggestions for apricot jam that I've got left over apart from keeping it inthe fridge indefinitely!
  • everyone used to use lightly broken egg white in the old days

    I made pate sucre or frangipanni type topping with the yolk
