Making something out of this stuff

Hiya all

Right im cleaning out my fridge as we are off home for Xmas tomorrow.

I have
4 large eggs
onion

half a pack of puff pastry
and a couple of mushrooms

Can I make some sort of quiche type thing for the journey? I had some sort of flan thing at a market once, it was cold, definately was pastry based. I dont tihnk Ive ever eaten a "real " quiche before Ive only ever tried te supermarket ones and I wasnt overkeen

Ideas please ?

the way i do it is make a base from normal pasty. and line the dish , then mix eggs up , add bit of milk , add everything that i gonna put in it , add salt and pepper , then pour into dish. then add a bit of grated cheese to top , and cook until brown.

i don't have any real recipe just a bit of this and that and if it look ok than it done. quiche is one of the=ose things i ad-lib and make up as i go.

    OK cool so shall I

roll out the spare pastry, cut out the circles needed and put them in the yorkie tin ( greased?)

take the eggs and beat them a bit with the fork , season

    add chopped mushrooms

pour this mix into the pastry shells

put grated cheese on the top

bake in oven- how long for?

    Does this sound oK?

Does the cheese melt in or does it coagulate on the top?

Don't think you can go wrong Lynz if you follow jcr's "recipe". I'm sure the puff pastry will be okay, but it might turn out a bit chunkier than a normal quiche.

When you say yorkshire pudding tin, I assume you mean one large one, like a sandwich cake tin, not one of those with a dozen individual recesses?

Just bung it all together, stick in the oven for half an hour or so (keep checking so it doesn't burn) and enjoy the result!

Edit: Ah, it does sound like you are planning individual ones. That might work but it would be better in an all-in-one sized dish. Have you got a large-ish pyrex bowl, as that would probably do? It's just that it could be a bit fiddly with individual ones.

No its one with 4 larger recesses.

ive also got a sandwich tin, would that be better? But I dont think Ive got enough filing for that really, as Ive just used one of the eggs for making chicken goujons for with the pizza for tea.

Getting late and Im manically cooking still , havent even packed yet !"

  • Quiche is made with a shortcrust pastry base. It will be a bit funny having puff pastry as a base. I think you'd be better cooking the puff pastry separately on a baking tray.

Lol well don't worry too much. You'd be surprised how the milk and beaten eggs bulk it out, and I'd mix most of the grated cheese in with it too, so just line whatever baking dish you decide on with pastry, then the onion (I'd fry it off first if you have time) and sliced mushrooms, pour over the egg mixture and add the last of the grated cheese on top.

Test with a knife that the egg mixture is set before turning the oven off.
