summery ways with beef...

Options
Just bought a £25 freezer back of beef - 3 roasting joints, 3kg mince, 2kg stewing steak, 2kg braising steak and 2 rump steaks. Any summery ideas for what to do with some of it (although I know its not very summery right now I remain optimisitc....)

    I bought a spice sachet from Mr M the other day, I think it was schwartz and it was for Cajun spicy rice with beef. It was a bit like a pilaf type thing and was lovely with salad.

    You could serve roast beef with salad rather than the usual roasts and veggies - I actually prefer roast beef with salad, tbh. Leftover roast beef is nice in fajitas with some stir-fried veggies and spices, I discovered this week! ;)

    The mince could be turned into burgers which would be nice BBQ'd if we ever get suitable weather (we can hope!); I also quite like chilli con carne in the summer, made with lots of veg to make it lighter and served with garlic bread and salad.

    I'm not sure about the stewing and braising steak but, if it's a typical British summer weather again this year, you might be grateful for beef stew by the end of it! :rotfl:

    I think a lot of recipes can be made summery just by what you serve them with :) For example pie and salad seems more summery than pie and chips.? Of course you can always keep some back in the freezer for winter?

    One rump steak can feed several people if small and a large number if large if you grill it rareish and serve it in a Thai beef salad. For non thai fans it can be a blue cheese dressing salad with lettice, onion, cucumber, radish, baby toms.

    Some roasting joints can be made into steaks (rib roast) or kebabs.
