Can't find AAC version on iTunes anywhere.Help please

Hi all. I'm trying to convert my songs into ringtones for my iPhone, but the way of doing it without purchasing songs frmo iTunes is baffling me.

It's the way where you choose the chunk of song you want then you have to convert to an AAC version.Which you do by clicking 'Advanced' and then 'Convert to AAC version'. But for some reason my iTunes isn't showing this. It's just greyed out. I've checked the Preferences where the AAC Encoder is selected in Import settings. I'm really baffled and don't know why any of my songs on my iPod won't do it.

If anyone could help me then I'd be greatly appreciated.Josh
