Can I keep cake mixture in the fridge? And for how long?

In trying to get everything ready for Christmas I wondered if I could prepare the cakes I'll make in advance and keep them in the fridge - I was thinking in the cake tins they'll be cooked in, covered - until I'm ready to bake them?

If so, how far in advance could I do this?

Thanks in advance... sorry if this has been asked, I did search, promise! :o

  • What sort of cakes are you thinking of? I would say it would be better to bake them now and store them in a decent container rather than store the raw ingredients. There's less risk of bacteria forming on the cooked ingredients than raw.

  • Just one chocolate sponge and one cherry - actually I've just splashed out on a lock & lock cake box so here's my chance to test it's limits!

    The only problem I can think of is that you might find that the raising agent in the flour stops working and your cakes don't turn out as well as expected. You could mix up all the dry ingredients in advance, adding the liquid and mixing just before you bake them - although to be honest I've not tried this yet.

    Might we worth baking them now and freezing - if you've the room in your freezer (unlike me :) )
  • I sometimes do this with a scone mix then add the wet ingredients just before baking. They still taste good but unfortunately don't rise!

    I have creamed multiples of 4oz butter, 4oz sugar and 1 egg and stored in a plastic box in the fridge at this stage for about 2 weeks. When ready to cook I have weighed out the amount of mixture and added the same weight of flour. Usually no milk is needed but can be added to get the right consistency.

  • Thanks all - actually just doing the sugar and butter in advance will probably help. So think I'll do that Saturday and cook on Sunday...:question: planning to do the turkey/chicken on Sunday too.. think I am getting myself stressed over nothing, worrying about not having time to do everything and then feeling lousy :rolleyes:
