mortgage in france/ in the uk / buy to let

we have a joint morgage on our flat in london, we own a house(no mortgage) in france and we rent it.
now, we would like to buy another house in france, using our uk salaries + the fact that we already own a house outright in france. that shouldnt be a problem.
Iif in 6 months time, we want to get a mortgage in the uk to buy another flat to ive in:
- will the bank know about the fact we just got a mortgage in france on a house? how would they know?
- if we dont want to transfer our existing mortgage in the uk as a buy to let, what is the better option, get a bridging mortgage for a year and then hope they forget about it? or i get the old flat under my name and my partner gets the new one under his name?
