Outlook help: inbox headers for different email addresses

Hi,
This must have an easy answer ... I have set up inbox email headers for my different email addresses (can't remember how I set them up). I must have clicked on something because now in my inbox at the top I have just the header "Categories (none) 1913 emails" and all my emails are clumped together. I'd be grateful if someone could tell me how to get my different email headers back and put the emails into separate categories again!
