Wordpress/nav menu help please

Hi guys

Helping someone out with a WP site. Two problems

1) No matter what we do the wording in the navigation menu (ie the page titles) won't change. I've tried changing the page title, no joy, tried removing/readding the page to menu, no dice.
What we wanted to do was have different text on the menu to the page titles but can't see how to achieve this

anyway messing around with 1) led to

2) For some reason the page that I've tried adding/removing/changing title of, it's now in the nav menu but the wording has gone. I.e. there's a gap, the link's there but no text

any help appreciated

Are you using one of the Wordpress templates your own custom template?

What's the website address?
