Interior doors - changing handles from ones with locks

Our new house has door handles we don't like and would like to change. Unfortunately, for some reason the current handles are all the type that are lockable so when you take them off there's a large cavity making it impossible to just replace them with a 'normal' (turning only, not locking) handle. Is there anything we can do to enable us to fit 'normal' handles?

I'm assuming the key hole is in the back plate like in this one:

If that is the case, then you just need to buy the equivilant handle but without the keyhole, like this

That will cover the key hole in the door, but leave the sash lock in place as you can still use the latch part of the mechanism, but not the lock part.
Otherwise you need to start setting in pieces of timber into the hole where the actual lock came out of which gets complicated.Eat vegetables and fear no creditors, rather than eat duck and hide.0
