Of course they can, provided they can show a link between the illness and the hotel. Relatively easy if they are eating all thei meals there and the operator is moving everyone from the hotel, slightly less easy if they have been buying foood outside and they are the only people ill!0

Can I ask where they are staying? Country will do if you don't want to name the hotel.
In terms of compensation no doubt the tour operator will do tests and conclude that "there were no problems at the hotel" and it must be an "airborne virus" or somesuch!
I've known this to happen when 150 guests all fell ill at one hotel!
To be honest it is very very very hard to prove definitively that you have had food poisoning as a result of poor hygiene at the hotel. Even if you can get a +ve test from your doctors back home (many docs won't even bother testing if you've been abroad unless you're really really ill) that 100% confirms gastroenteritis caused by food poisoning, you then have to prove it was something you ate in the hotel and then there is always the possibility that it wasn't the hotels fault per se but some food they were supplied was contaminated etc....0 -
