Need help with my new granite worktops pls!

Hi everyone.
I have had granite worktops in my new kitchen for about a month now. I went for kashmir white and was told that it was a 'softer' granite so may stain if I left a pool of olive oil on it overnight.
However its rubbish, everything stains! I left the olive oil bottle on the side whilst I made dinner and when I came to move it afterwards (perhaps an hour later) there was a ring in the granite. Also if frying food splashes and I dont see it and clean it straight away, im getting dark spots on the worktop.
Is light coloured granite really this difficult or have I been unlucky? I thought it would stand up to a bit of 'kitchen work' but I darent use it!
Also, tips for getting the stains out would be useful.

What was it sealed with when it was installed?

Alan, yeah its probably a good idea to move it.
Yes it has been sealed. The company said I could do it every six months. It wasnt a fly by night place either, its a local company who are well known and have a good reputation. I shall probably give them a ring, maybe theres a fault somewhere because I really didnt expect to have to be so careful. I have wooden mats everywhere!0 -
