Gordon Ramsay recommends you marinade in olive oil for at least an hour (with whatever herbs, spices you fancy) sear them for 2-3 mins one side in a really hot pan, turn over and do the other side for 2 mins. then stick them in the over (190 / gas 5) for 6 - 8 minures for medium rare (obviously longer if you want them better done than that)

Leave to rest for 5 minutes before serving.

I have done them like this successfully many times.
I wanna be in the room where it happens
  • Lamb steaks are perfect for slow cooker cooking. Slice an onion into the bottom of the ceramic dish. Crush 3 or4 garlic cloves and spread evenly over 4 lamb steaks and put them on top of the onions. Pour over 200mls Port, cover with lid and cook on low for 4 - 5 hours. Remove steaks to a warm plate. Mix 2 teaspoons cornflour with a little cold water to make a smooth paste. Crumble a lamb stock cube into a mixing jug and add 1pint boiling water and stir until dissolved. Add half the stock to the slow cooker then add the cornflour paste, stirring with a balloon whisk. Add remaining stock and continue stirring until the required consistency.

    No it isn't.
I've seen one brought back from the dead after 10 years.
One would hope that the OP has decided how to cook the lamb steaks by now...:D
