What can I do with pouisson(?sp!)

I have a pouisson that is skewered and prepped to cook but can't find any recipes. (I've tried searching, but it might help if I knew I'd spelt it right...)
It's for my partners birthday meal tonight so any pointers would be useful please. I've root ginger, lemon, mustard and honey in the cupboard but no ideas really are coming to mind. Any suggestions are welcome and don't have to include the other ingredients I have. Also, would it work in a slow cooker?

Ideally you would barbeque it.
I would brush the whole thing, inside & out, with olive oil & lemon juice, then add salt & pepper, grated zest of lemon and some chopped garlic. If you have some thyme, that would be great too.
Simply bake it in the oven as if you were roasting it.
An alternative would be a brush with honey & mustard, again mixed with a little oil & lemon juice.
BTW - it's pouissin ... that might help with a search.

You can grill a spatchcocked (backbone removed, spread flat and skewered) poussin, just do the normal checks for clear juices as you would with a bigger chicken0
