Try using COUNTA() rather than SUM(), so:

=NOT(COUNTA(A6:C6))+NOT(COUNTA(H6:J6))+...

etc....

How about this, which I did get a slight bit of help with

Formula is : =SUM(IF(FREQUENCY(IF(WEEKDAY($B$2:$AC$2,2)>4,IF(B3:AC3="",COLUMN(B3:AC3))),IF(WEEKDAY($B$2:$AC$2,2)<=4,COLUMN(B3:AC3)))=3,1))

which is an array formula and needs to be entered by pressing Control Shift Enter rather than just enter
